Mom’s Holiday Chex Mix

When I was little my mom would make Chex mix to hand out to co-workers and friends for Christmas and we always helped her make it. We would sit with towels on her bed bagging the mix after it cooled and I remember the “oopsie, it fell, gotta eat it” going on ever other minute with me and my sisters. Now I tried this recipe from my mom for my kids, not for presents (but you can) but just for us to snack on. Of course I’ve altered it a little to my own taste adding a touch of garlic for that little kick and with the Splenda it doesn’t get really sweet so the flavor has a nice balance to it. But of course, it’s just a Chex mix type snack so you can really add whatever you like. My kids would agree that this is a great way to have fun during the holidays.

Ingredients:

2 cups (heaping) Rice Chex

2 cups (heaping) Wheat Chex

2 cups (heaping) Corn Chex

2 cups (heaping) Cherrios

2 cups (heaping) Pretzel twists or sticks

2 cups (heaping) Fritos or Bugle’s Chips

1 Stick Butter

1/2 cup Corn Syrup (Karo)

1/2 cup Splenda Granulated Sugar

1/2 cup Vegetable or Corn oil

2 T Woshtersire Sauce

Dash of Garlic Powder (optional)

1/2 cup Furikake Topping (optional)

Instructions:

In a large bowl mix Rice, Wheat, & Corn Chex till well blended. Mix in your Cherrios, pretzels and chips (Fritos or Bugle’s –or both if you like). Make sure everything is evenly mixed together.

Pre head the oven to 250 degrees F.

In a sauce pan, melt together Butter, Corn Syrup, Sugar, Oil, garlic powder (if adding) and Woshtersire sauce. Make sure it is well blended.

Line 2 large baking pans with parchment paper and set aside. Using a ladle, slowly pour sugar mixture over cereal mixture and mix. Repeat with another ladle full. Make sure mixture is fully coated and continue mixing. Slowly add the Furukake topping and mix well if you like.

Put half of the mixture onto one pan and half on the other. Spread the mixture to fill the pan. Try to make a single layer of the cereal.

Place it in the oven and stir every 20 minutes for 1 hour. Remove from oven and let cool. If you can manage to let it cool without eating it all (it tastes good when warm), then bag it up or place it in an air tight container to keep for later!

Tip: You can put any additional ingredients to the mix if you want. Before the baking you can put any type of nut, and after you can add things like M&M’s, Recess Pieces or White Chocolate chips to make it even more of a treat.
